Ingredients:

  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • 2 tbsp. of olive oil
  • 2 tsp. of curry powder
  • 1 tsp. of cumin
  • 1 tsp. of turmeric
  • 1 tsp. of paprika
  • 1/2 tsp. of cayenne pepper (optional)
  • 2 cans of chickpeas, drained and rinsed
  • 1 can of diced tomatoes
  • 1 cup of vegetable broth
  • Salt and pepper, to taste
  • Optional toppings: chopped fresh cilantro, yogurt, or toasted coconut flakes

Instructions:

  1. Heat the Olive Oil: In a large saucepan, place the olive oil over medium heat. Allow it to heat up for a minute or two until shimmering.
  2. Sauté the Onions: Add the diced onions to the heated oil. Stir occasionally and cook until the onions turn soft and translucent, which usually takes about 5 minutes.
