Our best Chickpea Curry recipe

Ingredients:

  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • 2 tbsp. of olive oil
  • 2 tsp. of curry powder
  • 1 tsp. of cumin
  • 1 tsp. of turmeric
  • 1 tsp. of paprika
  • 1/2 tsp. of cayenne pepper (optional)
  • 2 cans of chickpeas, drained and rinsed
  • 1 can of diced tomatoes
  • 1 cup of vegetable broth
  • Salt and pepper, to taste
  • Optional toppings: chopped fresh cilantro, yogurt, or toasted coconut flakes

Instructions:

  1. Heat the Olive Oil: In a large saucepan, place the olive oil over medium heat. Allow it to heat up for a minute or two until shimmering.
  2. Sauté the Onions: Add the diced onions to the heated oil. Stir occasionally and cook until the onions turn soft and translucent, which usually takes about 5 minutes.
  3. Add Aromatic Ingredients: Introduce the minced garlic and grated ginger into the saucepan with the onions. Stir continuously and cook for another minute until fragrant. This step infuses the dish with rich aromas and flavors.
  4. Incorporate Spices: Sprinkle the curry powder, cumin, turmeric, paprika, and cayenne pepper (if using) into the saucepan. Stir well to coat the onion mixture with the spices, allowing them to toast slightly for about a minute. This enhances the depth of flavor in the curry.
  5. Introduce Chickpeas and Tomatoes: Gently pour in the drained and rinsed chickpeas along with the canned diced tomatoes. Stir to combine all the ingredients evenly.
  6. Add Vegetable Broth: Pour the vegetable broth into the saucepan, ensuring it covers the chickpeas and tomatoes. Bring the mixture to a gentle boil over medium heat.
  7. Simmer: Once boiling, reduce the heat to low and let the curry simmer uncovered for 20-25 minutes. Stir occasionally to prevent sticking and ensure even cooking. The chickpeas should become tender, and the sauce will thicken beautifully during this time.
  8. Season: Taste the curry and adjust the seasoning according to your preference. Add salt and pepper as needed to enhance the flavors.
  9. Serve: Ladle the hot chickpea curry over a bed of rice or your preferred grain. Garnish with optional toppings such as chopped fresh cilantro, a dollop of yogurt, or toasted coconut flakes for added texture and flavor.
  10. Enjoy: Serve the aromatic chickpea curry immediately while it’s piping hot. Relish every spoonful of this flavorful and satisfying dish, perfect for a cozy meal any day of the week!
