Classic Pancakes Recipe

A pancake is a flat cake, often thin and round, prepared from a batter and cooked on a hot griddle or frying pan. Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 cups buttermilk
  • 4 tablespoons unsalted butter, melted

Instructions:

  1. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, beat the eggs and then mix in the buttermilk and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined (small lumps are okay).
  4. Heat a non-stick pan over medium heat and scoop 1/4 cup batter onto the pan for each pancake.
  5. Cook until the edges start to look set and bubbles form on the surface, then flip and cook until both sides are lightly browned.
