Baked Sweet Potato with Black Beans and Salsa recipe


  • 2 medium sweet potatoes, peeled and diced
  • 1 can of black beans, drained and rinsed
  • 1 cup of salsa
  • 1 tbsp. of olive oil
  • Salt and pepper, to taste
  • Optional toppings: chopped fresh cilantro, shredded cheese, sour cream, or avocado slices


  1. Preheat the oven to 400°F.
  2. In a large bowl, mix together the diced sweet potatoes, black beans, salsa, and olive oil.
  3. Season with salt and pepper to taste.
  4. Spread the mixture evenly in a baking dish.
  5. Bake for 25-30 minutes or until the sweet potatoes are tender and the edges are golden brown.
  6. Serve hot and top with desired toppings, if desired. Enjoy!
