Ingredients:
- 2 medium sweet potatoes, peeled and diced
- 1 can of black beans, drained and rinsed
- 1 cup of salsa
- 1 tbsp. of olive oil
- Salt and pepper, to taste
- Optional toppings: chopped fresh cilantro, shredded cheese, sour cream, or avocado slices
Instructions:
- Preheat the oven to 400°F.
- In a large bowl, mix together the diced sweet potatoes, black beans, salsa, and olive oil.
- Season with salt and pepper to taste.
- Spread the mixture evenly in a baking dish.
- Bake for 25-30 minutes or until the sweet potatoes are tender and the edges are golden brown.
- Serve hot and top with desired toppings, if desired. Enjoy!
